One of our favourite, most homely of dishes to enjoy this month is festive red cabbage. It’s a simple dish, with very few ingredients and can be made in advance. Remember, red cabbage goes a LONG way. Half a cabbage is probably enough for four side portions but cook it all and pop it in the freezer to use later.
Here’s how we prepare it.
Knob of butter
Shred a whole red cabbage
A generous swig of something festive, like sloe gin, port, or some mulled wine
Zest and juice of two oranges
A teaspoon of nutmeg and cinnamon
A star anise
Handful of sultanas & walnuts
Warm a large frying pan and melt the butter
Add in the shredded cabbage and coat it in the butter
Pour in your festive tipple, again ensuring the cabbage is coated
Then add your orange juice and zest. If you feel it’s a little dry, add some water.
Finally add your spices
Keep stirring all your ingredients on a very low heat, you want this to cook through slowly, not stick to the pan and for the cabbage to become infused with all your spices and festive flavour.
Top with sultanas walnuts!
The result is a soft, but not soggy, side dish that feels like it is the taste of Christmas, providing a seasonal hug for your belly!
