This is such an easy, light curry it is great for a quick dinner or even lunch. Serve with some brown rice for a tasty supper and adjust the heat to your tastes. This is also a great summer side dish as it does not have too much ‘sauce’.
1 onion, finely sliced
4 cloves of garlic, minced
1 large courgette, in large chunks
1 large pepper, in large chunks
4 tomatoes, in eighths
1 tablespoon sunflower oil
1 tsp cumin seeds
½ - 1 tsp chilli flakes (adjust to your taste)
1 tsp turmeric
1tsp ground coriander
Salt and pepper to taste
½ tsp coconut sugar or brown sugar
1. Add the oil to a saucepan and heat, fry the cumin seeds until they start to pop and brown then add the chilli and turmeric, stir well. Add the onions and garlic and cook on a low heat until soft.
2. Add the peppers and cook for a few minutes before adding the courgette and ground coriander. Cook for 2 mins then add the tomato.
3. Cook until the courgette is just soft and add the salt, pepper, sugar and fresh coriander, stir well and serve.
