Blood Orange Pancakes

Thin, sweet crepes drenched in a steaming hot orange syrup & decorated with beautifully caramelised blood orange slices fresh from the oven.

Makes 4-6 crepes


  • 200g plain flour
  • 340ml soy milk
  • 6 tablespoons caster sugar
  • 2 teaspoons vanilla extract
  • 2 blood oranges
  • 150ml orange juice
  • 4 tablespoons golden syrup
  • 3 tablespoons light soft brown sugar
  • 1 teaspoon vegan butter plus more for greasing pan


    1. Thinly slice one orange & place into a baking tray
    2. Brush with 1 tablespoon golden syrup & bake for 10-12mins at 200c
    3. Whisk together flour, milk, sugar & vanilla until smooth. Mixture should be slightly runnier than a usual pancake batter
    4. Melt butter onto your pancake pan & circulate
    5. Ladle your batter on as thin as possible
    6. Flip after 30 seconds & allow other side to become golden
    7. Flip in half, then into a quarter & place onto your serving plate
    8. Repeat the process until your batter is finished
    9. Cut remaining orange in half & squeeze juice into a small saucepan [fleshy bits are great too!]
    10. Add butter, brown sugar, syrup & orange juice
    11. Bring to simmer on high heat for 5 minutes until all sugar has dissolved
    12. Pour hot syrup over crepes
    13. Decorate with sliced oranges & enjoy!
